I love soup, especially homemade soup.  Typical store bought soup contains some good ingredients along with a lot of unsavory ingredients, such as modified food starch, MSG, hydrolyzed yeast extract (another name for MSG), etc…you get the idea.

Unfortunately, with our busy schedules, we don’t have the time to spend making homemade soup.  This soup is a great answer to that dilemma.  It takes virtually less than a half hour to make and it’s nutritious, delicious, creamy and satisfying.
Whether you wish to grace your holiday table or just a soup to warm you up on a cold winter’s day, this Curried Pumpkin Soup really hits the spot.
The curry adds just the right amount of bite to it to spice it up a bit.  If you really like curry, you can add more to taste.

So, without further adieu, I present to you my recipe for delicious Curried Pumpkin Soup.  Guaranteed to warm your soul.

Curried Pumpkin Soup

Ingredients:

1 small onion, chopped
1 tsp. olive oil
2 C. Chicken broth (preferably homemade)
1 1/2 C Pumpkin Puree
1 tbsp. lemon juice (optional)
1 tsp. curry powder
1 tsp. sugar
Salt & Pepper to taste
1 – 14oz can coconut milk (homemade coconut milk is ideal)

Instructions:

Sauté onion in oil
Add broth, pumpkin, lemon juice, curry powder, sugar, salt and pepper
Bring to a boil
Simmer 15 minutes
Stir in milk


Heat & serve.  Now what could be simpler than that?

You may add more spices or even some hot sauce to really spice it up a bit.
