I love soup, especially homemade soup. ย Typical store bought soup contains some good ingredients along with a lot of unsavory ingredients, such as modified food starch, MSG, hydrolyzed yeast extract (another name for MSG), etcโ€ฆyou get the idea.

Unfortunately, with our busy schedules, we donโ€™t have the time to spend making homemade soup. ย This soup is a great answer to that dilemma. ย It takes virtually less than a half hour to make and itโ€™s nutritious, delicious, creamy and satisfying.
Whether you wish to grace your holiday table or just a soup to warm you up on a cold winterโ€™s day, this Curried Pumpkin Soup really hits the spot.
The curry adds just the right amount of bite to it to spice it up a bit. ย If you really like curry, you can add more to taste.

So, without further adieu, I present to you my recipe for delicious Curried Pumpkin Soup.ย  Guaranteed to warm your soul.

Curried Pumpkin Soup

Ingredients:

1 small onion, chopped
1 tsp. olive oil
2 C. Chicken broth (preferably homemade)
1 1/2 C Pumpkin Puree
1 tbsp. lemon juice (optional)
1 tsp. curry powder
1 tsp. sugar
Salt & Pepper to taste
1 – 14oz can coconut milk (homemade coconut milk is ideal)

Instructions:

Sautรฉ onion in oil
Add broth, pumpkin, lemon juice, curry powder, sugar, salt and pepper
Bring to a boil
Simmer 15 minutes
Stir in milk


Heat & serve.ย  Now what could be simpler than that?

You may add more spices or even some hot sauce to really spice it up a bit.
